The journey now leads north—to the untamed beauty of Lofoten, where towering mountains rise from the sea, crystal-clear waters weave through the scattered islands, and the air is crisp with the scent of salt and pine. Here, beneath the never-setting summer sun, a new chapter begins: the Wilder Kitchen food truck. In collaboration with our dear friends at Polarhagen, an inspiring vegan biodynamic farm, we are bringing vibrant, plant food to the people—rooted in the land, guided by the seasons, and infused with the wild flavors of the Arctic. This food truck is more than just a kitchen; it is a moving meeting place, a storyteller of the land, and a bridge between nature, nourishment, and community. With your support, we will build not only the truck itself but also a gathering space—benches, a fire pit, and a small library—to bring people together in conversation and connection. This is a call to those who believe in good food, sustainable living, and the magic of the midnight sun. Join us in bringing Wilder Kitchen to life in the wild north.

PLANT FOOD

The focus of the food truck is ‘plant food’ but what is this? Plant food is the term I use to describe cuisine that focusses on the flavours of plants and making food entirely from them. The food will be 100% vegan and using ingredients locally and organically sourced as possible. The ingredients grown by friends at Polarhagen and foraged in the local environment.

LOCAL, ORGANIC, BIODYNAMIC

Grown by Polarhagen the ingredients of the food truck have been grown with vegan biodynamic practices which focus on the abundance of the land without use of animal derived methods. They aim to treat the land with dignity and respect just how we choose to treat the sentient beings in our lives.

COMMUNITY

The food truck is a place to gather the people. Locals and those passing through are welcome to engage with the project, share thoughts and start conversation. As part of this project there will be a place you can rest your tired feet, grab a drink, or join for a wild trip where I take you out foraging or on a hike. All are welcome.

NATURE

Located in the stunning location of Lofoten, northern Norway, the food truck is the perfect place to stop off on the way to a hike, rest and gather your thoughts around an open fire, or fill up your belly on the way to Haukland beach. Truly the most idilic location!

REBECCA HAWKES

Rebecca Hawkes is the human behind WILDER KITCHEN. A food artist, otherwise known as a chef, creating events in Oslo, Norway. With respect for the natural world she works with local organic growers and supplier to make menus for businesses, create recipes and for her most important work, hosting events that educate and connect guests to one another and the natural world around them.

She has created work such as the HUMAN KIND PROJECT - A donation based pop up cafe where guests are invited to ‘pay as they feel’. This project was documented with the book WILDER KITCHEN: A YEAR OF GIVING to share recipes and the stories of the guest that are a part of the project.

Rebecca has been a part of community kitchen projects in India, Italy and Mexico. She is an active member of urban farm Losaeter and aims to create work that gives back.
