Originally from the UK but based in Oslo Norway I work as a chef to create what I call ‘plant food’. It is dishes that fall under the banner of ‘plant-based’, or ‘vegan’ yet I work with the ingredients to honour the beauty and tastes of the plants rather than to imitate food from the carnivore world. Unlike most food produced with these title attached, I look to create new experiences for guests. I am to delight but also nourish them.
I have studied herbalism, donate my time to grow in a community garden space and forage ingredients locally.
PLANT FOOD ☉
Food to me is the greatest art form. In the moment of creating a dish you are working with all senses and I am entirely present in what I am doing. Its a multi-sensory experience in which I create directly for the needs of another. To cook is a honour, as it takes vulnerability and trust for a dinner to eat food. The result of the food I create nourishes them, can tell a story, envoke nostalgia from their past and on a physical level creates the body in which they live.

Human Kind Project
Based upon a ‘pay as you feel model’, the Sunday café asks attendees to make a suggested donation for their coffee, tea or food, so that the funds can go towards feeding someone in their community and sustain the project on a long term basis. We believe in a table where all are welcome regardless of income. Healthy plant based food should not be a luxury but a necessity to living a happy and healthy life. Drinks and meals are created with nourishment in mind, what we offer, we see as a gift.
